How can I create a group email list so that the recipients cant see each others email in the header?

You should be able to create a group as normal but when you go to add the addresses to the email itself, instead of putting the addresses in the “to” spot, put them in the “bcc” spot. You should have a “to” spot, a “cc” spot and a “bcc” spot. If you put addresses in the “bcc” spot then those recieving the email won’t see who else the email was sent too. When they recieve the email, it will say “undisclosed recipients” instead of everyone’s email addys.
